Yield: 4 servings
Place 1/2 scoop of ice cream on each of the 4 cookies. Let the ice cream soften slightly and spread to edge of cookies. Top with the remaining cookies to form 4 sandwiches. Dip the edges of cookie sandwiches in chocolate sprinkles. Cover and freeze for 2 hours or until firm.
